A Good Cookie Recipe

Skippy Truffle Cookies 
I know this is off the subject, but thought I would share a new recipe I found.  I made it for the first time the end of last week.  I love these cookies!!!

They are really easy to make, unlike many other recipes I have tried.  There aren't many ingredients either.  That makes it nice too...

I just love recipes which are easy to make, few items are needed, and they taste great!  

I have made a few adjustments to the recipe because of sugar issues in my family.  I haven't totally cut out the sugar, but have replaced part of the brown sugar with Truvia. 

Ingredients:

1 Cup of your favorite peanut butter.  I use low carb Jiffy Peanut butter.
1 Cup of firmly packed light brown sugar.  This batch I used 1/2 cup of Truvia and 1/2 cup of light brown sugar.
1 Large egg
1 tsp. Baking soda
1/2 Cup of chocolate chips.  The first time is used small sugar fee dark chocolate chips.  This time I am using larger dark chocolate chips.  Use whatever you like.

Preheat over at 350

Mix all the ingredients together.  Drop by rounded spoon fulls on baking sheet.  Do not flatten. Place them about 2" apart.

Bake at least 9 minutes.  I actually baked them 11 minutes.  They will be very moist inside.  It may take more than 5 minutes cooling time to harden.  I actually placed mine in the freezer.  
They are yummy that way!

This batter will make 12 cookies.
